VEGAN CHOCOLATE CAKE WITH BERRIES
Cooking time: 30 min. + Cooling
You will need: – Walnuts – 360 g – Cocoa powder – 60 g – Salt – ¼ tsp – Dates – 170 g
Ingredients for the glaze: – Dates – 60 g – Agave nectar – 60 ml – Avocado – 120 g – Cocoa powder – 30 g
For the filling and decoration – 1 cup of fresh or frozen raspberries (120 g) – Other berries (120 g)
How to cook:
1. Dough. Grind nuts, salt and cocoa in a blender. Bringing to a consistency of dust, add pitted dates to the blender and whisk again until smooth. Divide the dough into 2 parts, wrap in cling film and leave to cool in the refrigerator.
2. Frosting. Pitted dates, agave syrup and avocado whip until smooth, add cocoa and whisk again.
3. Put 1 layer of dough on the baking pan (with removable sides) and tamp it well. Lay out a few spoons of chocolate icing and grated mixed berries. Top carefully lay out a second layer of chocolate dough.
